A warm, cosy breakfast that's perfect for sharing with family or serving to weekend guests. Sweet cinnamon apples and juicy blueberries are topped with a generous buttery oat and almond crumble, then baked until golden and crisp. Who said you can’t enjoy crumble for breakfast? This recipe was created as a delicious celebration of winter, comfort and a little bit of nostalgia. There is something so special about a warm fruit crumble straight from the oven — the sweet aroma of cinnamon and baked apples instantly brings a sense of cosiness and home.

Thinly sliced apples create the most wonderful texture, becoming tender while still holding their shape, while juicy blueberries add bursts of sweetness and a beautiful colour throughout the filling. I’ve used frozen blueberries here intentionally — not only are they more affordable during the colder months, but they are picked and frozen at peak ripeness, meaning you can enjoy deliciously flavourful berries without paying a premium for fresh berries that may be lacking in sweetness.

While this crumble is perfect served warm for breakfast alongside a spoonful of creamy Greek yoghurt, it can absolutely double as a comforting dessert. Serve it slightly warm with homemade vanilla custard and a generous dusting of icing sugar for a truly special winter treat.

Blueberry & apple filling

  • Frozen blueberries
    I use frozen blueberries here as they are more affordable, especially during the colder months. Frozen berries are picked and frozen at peak ripeness, meaning they retain their beautiful flavour and sweetness. They also release delicious juices as they bake, creating a naturally jammy blueberry sauce throughout the crumble. Fresh blueberries can also be used, and are lovely scattered over the top when serving.

  • Apples

    Thinly sliced apples create the most delicious texture in this crumble, becoming tender while still holding their shape. I love using pink apples as they have a naturally sweet flavour and a beautiful balance of crispness and softness when baked. You can also use other sweet varieties such as Pink Lady, Royal Gala or Jazz apples.

  • Maple syrup

    Maple syrup is used to naturally sweeten the fruit filling while adding a beautiful caramel-like flavour. It pairs wonderfully with the apples, blueberries and warm spices. It can be substituted with brown sugar if preferred.

  • Vanilla bean paste or extract

    I love using vanilla bean paste as it adds beautiful little flecks of vanilla throughout the crumble and gives a richer vanilla flavour. Vanilla extract can also be used and is a more affordable option that still adds delicious warmth and depth.

  • Cinnamon & ginger

    These warming spices add depth and cosiness to the fruit filling, enhancing the natural sweetness of the apples and blueberries. The ginger adds a subtle hint of spice that makes this crumble feel extra special.

  • Lemon juice

    A small amount of lemon juice brightens the flavours of the fruit and balances the sweetness of the maple syrup. It also helps prevent the apples from becoming overly sweet while adding a fresh, vibrant flavour.

  • Cornflour

    Cornflour helps thicken the juices released from the fruit as it bakes, creating a deliciously thick and glossy sauce rather than a watery filling.

Oat & almond crumble

  • Rolled oats
    Rolled oats make up the base of this crumble, adding a beautiful hearty texture and a delicious nutty, oaty flavour. They create those irresistible golden clusters throughout the topping.

  • Flour & almond flour

    A combination of plain flour and almond flour creates the perfect crumble texture — crisp and golden on the outside while remaining slightly soft and buttery underneath. Plain flour can be substituted with a gluten-free flour blend if required.

  • Brown sugar

    Brown sugar sweetens the crumble topping while adding a rich caramel flavour and helping create those delicious golden, crunchy pieces. It can be substituted with caster sugar, although brown sugar gives the crumble a deeper flavour.

  • Cinnamon

    Cinnamon adds warmth and sweetness to the crumble topping, complementing the apples and blueberries beautifully.

  • Salt

    A small amount of salt balances the sweetness and enhances all of the flavours in the crumble, making each ingredient shine.

  • Butter

    Cold butter is cubed and rubbed into the dry ingredients to create the perfect crumble texture. As it melts during baking, it creates a rich, buttery topping with golden crunchy pieces — delicious enough for breakfast but equally comforting as a late-night treat.

  • Flaked almonds

    Flaked almonds add beautiful texture and a delicate toasted flavour to the crumble topping. They become golden and crisp as they bake, adding an extra layer of crunch to every bite.

Ingredients

Blueberry & apple filling
  • 3 medium red apples (about 600g), peeled, cored and cut into 2cm chunks
  • 300g frozen blueberries
  • 3 tbsp maple syrup (60ml)
  • 1 tsp vanilla bean paste
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger (optional but lovely)
  • Finely grated zest of ½ lemon
  • 1 tbsp lemon juice
  • 2 tsp cornflour
Oat & almond crumble
  • 180g rolled oats (2 cups)
  • 100g plain flour (⅔ cup)
  • 70g almond meal (¾ cup)
  • 60g brown sugar (¼ cup, lightly packed)
  • 1 tsp ground cinnamon
  • ¼ tsp fine salt
  • 140g cold unsalted butter, diced
  • 60g flaked almonds (about ⅔ cup)
To serve
  • Thick Greek yoghurt
  • Fresh blueberries
  • Toasted coconut flakes
  • Maple syrup

Instructions

Blueberry apple filling
  1. Preheat the oven to 180°C fan-forced. Lightly grease a medium baking dish.
  2. In a large bowl, combine the apple chunks, frozen blueberries, maple syrup, vanilla, cinnamon, ginger (if using), lemon zest, lemon juice and cornflour. Toss until everything is evenly coated.
  3. Transfer the fruit mixture to the prepared baking dish and spread into an even layer.
Oat & almond crumble
  1. Combine the rolled oats, flour, almond meal, brown sugar, cinnamon and salt in a large bowl.
  2. Add the cold butter and rub it into the dry ingredients using your fingertips until the mixture forms coarse, buttery clumps with some larger pieces remaining.
  3. Fold through the flaked almonds.
  4. Scatter the crumble generously over the fruit, ensuring it is evenly covered without pressing it down.
  5. Bake for 40–45 minutes, or until the fruit is bubbling around the edges and the crumble is crisp and deeply golden. Allow to rest for 10 minutes before serving.
To serve
  1. Spoon into bowls and top generously with thick Greek yoghurt, fresh blueberries, toasted coconut flakes and a drizzle of maple syrup.

Notes

Make ahead suggestions:

  • Prepare the crumble mixture up to 2 days ahead and store it separately in the refrigerator.
  • Assemble the entire crumble up to 24 hours before baking, cover and refrigerate until ready to bake.
  • You may need to add 5–10 minutes to the baking time if cooking straight from the fridge.

  • Delicious with a dollop of vanilla yoghurt or a splash of custard for a more indulgent brunch.
  • Bake in individual ramekins for an elegant entertaining breakfast.

Freshly fed sourdough starter

I love the simple ritual of feeding my sourdough starter on a cold winter morning. There is something so satisfying about slowing down, caring for something that is constantly growing, and knowing it will become part of a delicious homemade loaf.
