Ingredients
- 3 large ripe peaches (about 450–500g total), halved and pitted
- 1 Tbsp (20g) runny honey
- 1 Tbsp (20g) brown sugar
- 1 tsp vanilla extract
- Finely grated zest of ½ orange
- 1 tbsp (15ml) fresh orange juice
- 1 tbsp (15ml) extra virgin olive oil
- Pinch flaky sea salt
- Freshly cracked black pepper
- 1 burrata
- 25g pistachios, roughly chopped
- Small handful fresh basil or mint
- Extra drizzle of good olive oil
- Extra flaky sea salt
Instructions
- Preheat oven to 180°C (fan 160°C).
- In a small bowl, whisk together honey, vanilla, orange zest, orange juice, olive oil & a pinch of salt & pepper.
- Place peaches cut-side up in a baking dish. Spoon the mixture over each half.
- Roast for 18–22 minutes, until edges caramelise and peaches soften but still hold shape (you want jammy, not collapsing). Let cool for 5–10 minutes. They should be warm, not hot.
- Arrange burrata on a platter. Tear slightly open. Nestle peaches around it. Spoon over the roasting juices.
- Finish with pistachios, torn basil or mint, olive oil drizzle & flaky salt. Enjoy!

Serving suggestion
- Serve with toasted sourdough or grilled bread for scooping.
- Great served with a glass of sparkling or chilled white wine!
Storing & meal prep
- Best enjoyed fresh once assembled.
- Roasted peaches can be made up to 24 hours ahead and stored in the refrigerator; bring to room temperature or gently warm before serving. Leftover peaches keep 2–3 days refrigerated and are delicious over yogurt, ricotta or ice cream.
