The perfect snack, lunchbox treat or breakfast for your little ones! These porridge bars are much loved by my 18-month-old and are full of healthy blueberries, banana and oats. A super easy and super nourishing snack to have on hand in the freezer.

These bars have been a freezer staple for my little one since he was 8 months old! He still absolutely loves them, and they are a great breakfast option to have on hand for busy days or car trips. They are great served with yoghurt to round out a meal.

Blueberry porridge bars

  • Quick oats

    Quick oats give these bars the perfect soft porridge texture. You can use regular rolled oats, but I would recommend pulsing them briefly in a blender for the best texture of your bars. Be sure to use gluten free oats if you have a gluten intolerance.

  • Eggs

    Eggs allow these bars to rise and pack a nutritional punch. I like to know my little one is getting in some protein when served as breakfast.

  • Banana

    Banana helps to sweeten these bars and provide a soft texture. Be sure to use bananas that are ripe - the browner the better! If your bananas are huge, just use one.

  • Almond milk (or full cream cow’s milk)

    I use either almond milk or full cream cow’s milk in this recipe - both options are delicious! Use almond milk if your child has a dairy intolerance.

  • Maple syrup

    Maple syrup is added to further sweeten these bars. Honey can be substituted if your child is over 12 months old. Or feel free to leave out this as the bars are naturally a little sweet from the bananas and berries!

  • Vanilla extract

    Real vanilla extract provides a subtle vanilla flavour that pairs perfectly with the blueberries.

  • Cinnamon

    Cinnamon makes these bars so delicious and is a great way to introduce your little one to spices. Feel free to leave it out if desired.

  • Frozen blueberries

    I prefer to use frozen blueberries as they are more affordable and available all year around. Feel free to use fresh blueberries if they are in season! Frozen raspberries can also be used - delicious! Frozen strawberries or blackberries tend to be too big and will make your bars soggy.

Ingredients

Blueberry porridge bars
  • 2 Tbsp Kewpie mayonnaise
Vanilla buttercream
  • Icing sugar
  • butter
  • vanilla extract

Instructions

Fluffy vanilla cake
  1. Add all ingredients to a small kitchen blender (e.g Nutribullet) and pulse until smooth. Pour into a small bowl and set aside.
