This divine dessert is packed full of gooey chocolate chunks and is what cookie dreams are made of! Flavoured with browned butter, this fudgy cookie is perfect for cosy winter evenings around fire. Pass around the spoons, no one can wait for this to be served up!

This is such an easy and versatile dessert that everyone loves! I have made many variations of this recipe over the years - smores flavour by adding marshmallows and crushed cookies for a bonfire night, freeze dried raspberries and white chocolate for entertaining. All are a big win! Other delicious flavour combinations could be pistachio & white chocolate, pecan or pretzel. Options are endless here!

I like to serve this cookie with big generous scoops of vanilla ice cream on top and let people just dig in with spoons. The icecream gets all melty on the warm cookie and you get a big skillet of creamy, chocolately, gooey, goodness. Alternatively, this cookie can be cut into pretty wedges and served individually on plates with icecream.

If serving to guests, I like to make this cookie ahead and freeze it. It can then just be cooked from frozen at the time! Win-win!

The browed butter is really what sets this cookie apart! It adds such a luxe caramel/toasted flavour that cannot be achieved any other way! Browning butter sounds fancy but it’s really very simple! I’ve used pictures below as a guide to achieving the perfect level of browned butter so you don’t end up with burnt butter - unusable! That said, I have made this recipe with regular butter when I’ve been very short on time and it’s still pretty good!

Cookie

  • Flour & cornflour

    Flour is used to bind the ingredients and create the bulk of the cookie dough. Cornflour helps to create that delicious fudgy texture that we all love!

  • Brown sugar & caster sugar

    A combination of both sugars is what create the perfect texture and flavour. Brown sugar adds a caramel flavour and fudgy texture and caster sugar provides sweetness without it becoming too rich and sickly sweet. In saying that this recipe is certainly for the sweet tooth!

  • Butter

    Our secret ingredient that makes this recipe special. We brown the butter which adds such a luxe caramel/toasted flavour that cannot be achieved any other way!

  • Egg & egg yolk

    Using one whole egg helps the cookie to rise and get a delicious crispy crust. I like to add an extra egg yolk which acts as a fat and makes the texture of the cookie truly luxe.

  • Baking soda

    Baking soda is used as the raising agent here to give the cookie a slightly fluffy texture.

  • Vanilla extract

    Real vanila extract provides a subtle vanilla flavour that pairs perfectly with the dark chocoalte.

  • Dark chocolate

    I like to use a good quality dark chocolate in this recipe and roughly chop it. This allows you to a combination of big gooey chocolate chunks and chocolate shavings that disperse the chocolate flavour more evenly throughout the cookie. I prefer to use a dark chocolate (70%) as it balances perfectly with the sweetness of the dough. Feel free to use milk or white chocolate if you are a real sweet tooth!

  • Salt

    The chefs kiss! Salt is essential sprinkled over the top of this cookie. It makes the flavours pop in your mouth and balances the sweetness perfectly. Flaky salt is best to provide a little texture but regular cooking salt is also fine. DO NOT LEAVE OUT!
