A weeknight one-pot superstar! Juicy chicken thighs are cooked in a bed of tasty lemon garlic rice & broccoli. A super easy recipe the whole family will love!

I love these recipes where you can literally dump everything into a pan, pop it into the oven and you have a healthy but homely dinner at the end of it. Protein - tick. Carbs - tick. Veg - tick!

Leftovers also reheat really well for work lunches or a weekend lunch the following day - perfect for busy families! This recipe also has pretty mild flavours (still very tasty!) so it’s pretty much guaranteed that the whole family will approve. Even my 18-month-old gobbles down this rice!

One-pan lemon garlic chicken & rice

  • Chicken thighs (boneless, skinless)

    I like to use boneless, skinless chicken thighs in this recipe due to convenience! Bone-in, skin-on thighs would work fabulously however they aren’t readily available where I live, and my husband hates the time it takes to cut around the bone (its tasty guys!). Do not use breast here as they would dry out before the rice is cooked.

  • Long-grain rice

    Long grain rice absorbs all the juices in this recipe perfectly without being gluggy or mushy.

  • Lemon juice & zest

    Lemon juice provides extra liquid, and zest really reinforces the lemon flavour. Cuts through the richness of the chicken and rice perfectly making this so moreish!

  • Onion & garlic

    Onion and garlic are the flavour foundations for this recipe. Onion provides an earthy sweetness. Shallots could also be used instead. Plenty of garlic is used to maximise the flavour in the dish as the other flavours are pretty subtle. Please use fresh garlic here!

  • Thyme & oregano

    Thyme and oregano are used as dried herbs for convenience. Feel free to use a few sprigs of fresh thyme if you have it on hand!

  • Chicken stock

    Chicken stock is used as the primary liquid for the rice to absorb. This really boosts the umami flavour in the dish and makes the rice so tasty! Bonus if you have homemade chicken stock.

  • Butter

    A small amount of butter is added to create luxe! Can be left out if you’re having a super healthy week!

  • Salt & pepper

    Salt helps to bring out the flavours and pepper gives the rice a little zing. Do not be tempted to skip this!

  • Broccoli

    Broccoli is added to the rice part way through the cook. This is such a simple way to round out the full meal and create delicious roasted broccoli in the process!

Ingredients

One-pan lemon garlic chicken & rice
  • 500g chicken thighs (boneless, skinless)
  • 2 Tbsp extra virgin olive oil
  • 1 brown onion (diced)
  • 4 cloves garlic (minced)
  • 2 tsp dried oregano
  • 2 sprigs of fresh thyme
  • 1 cup long grain rice
  • 2 cups chicken stock
  • 1 lemon (juice & zest)
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 Tbsp butter
  • 1 small broccoli (chopped into florets)
  • Fresh parsley & dried chili flakes (to serve)

Instructions

One-pan lemon garlic chicken & rice
  1. Preheat the oven to 180 degrees Celsius. Line a baking tray (approx 20x20cm) with baking paper.
