Ooey, gooey coffee caramel topped with the most delicious walnut crumble. This is oaty caramel slice amped up to its finest! So easy to make, this is a warming winter dessert that’ll get everyone smiling.

This slice is half dessert, half slice. It’s rich, decadent and completely addictive! Sure to be one made over and over again! Super easy too, get the kids to help out with crumbling the mixture over the top and watching the caramel bubble in the oven.

I like to serve this slice slightly warmed with freshly whipped cream or vanilla ice cream. Also great served chilled for an afternoon treat with a mug of hot coffee.

Coffee caramel

  • Condensed milk

    The sweet creamy stuff in the can that kids LOVE to lick straight! Condensed milk makes up the bulk of this caramel filling and make it creamy and delicious. Please use regular full fat condensed milk here.

  • Butter

    Butter is melted into the caramel and gives it a delicious buttery flavour and makes it creamy.

  • Brown sugar & golden syrup

    Both sweeteners give this caramel a rich butterscotch flavour and a dark colour.

  • Coffee

    A double shot of espresso is used to balance out the sweetness of the caramel and give a subtle coffee flavour. The secret ingredient to making this slice something quite marvellous! Can be left out if you do not like coffee.

Walnut crumble

  • Flour, oats & coconut

    The dry ingredients that make up the bulk of the base and crumble. Flour binds everything together and oats give the slice a wonderful chewy texture. Coconut brings in a lovely toasted nutty flavour. Use gluten free flour to make this slice gluten free!

  • Brown sugar

    Gives the crumble sweetness. I prefer brown sugar to white as it reinforces the caramel flavour and makes the crumble moister and chewier. Can be substituted with white sugar if desired.

  • Butter

    Butter is used as the fat to bring the dry ingredients together. Gives delicious buttery flavour.

  • Vanilla extract

    A slight hint of vanilla reinforces the caramel flavour and makes this mixture delicious!

  • Baking powder

    A little amount of baking powder makes this mixture slightly fluffy. Makes the base less dense and holds up to the density of the caramel better.

  • Salt

    Salt balances out the sweetness and make this addictive! Don’t be tempted to skip this!

  • Walnuts

    Walnuts are folded into the crumble. They add such a lovely nutty flavour and pair perfectly with the coffee flavour. Can be substituted with roughly chopped pecans or macadamias.

Ingredients

Caramel coffee filling
  • 2x 395g sweetened condensed milk
  • 150g butter
  • 2 Tbsp golden syrup
  • 1/4 cup brown sugar
  • 2x shots of espresso or 60 ml of strong instant coffee
Crumble
  • 250g butter
  • 1 cup brown sugar (firmly packed)
  • 2 tsp vanilla essence
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 1/2 cups rolled oats
  • 1/2 cup desiccated coconut
  • 1/4 tsp salt
  • 1/4 cup walnuts (roughly chopped)
