Ingredients

Base
  • 100g white chocolate (chopped)
  • 100g butter
  • 1/4 cup brown sugar
  • 1/4 cup pistachio spread
  • 1 tsp vanilla extract
  • 4 cups rice bubbles
White chocolate & pistachio topping
  • 150g white chocolate
  • 1/4 cup pistachio spread
  • 1/2 cup pistachios (roughly chopped)
  • Pinch of salt

Instructions

Base
  1. Line a 20 x 30 cm slice tin with baking paper.
  2. In a saucepan set over low heat, gently melt all ingredients except the Rice Bubbles, stirring until smooth and combined.
  3. Place the Rice Bubbles in a large mixing bowl. Pour the melted mixture over the top and quickly stir until evenly coated.
  4. Transfer the mixture to the prepared tin and press it down firmly with the back of a spatula to create an even layer. Refrigerate for at least 30 minutes, or until set.
White chocolate & pistachio topping
  1. Melt the white chocolate in the microwave in 30-second bursts, stirring between each, until smooth. Drizzle over the slice, then use a spatula to spread evenly across the surface.
  2. Warm the pistachio spread in the microwave for about 15 seconds to loosen, then drizzle over the white chocolate layer. Use the tip of a spoon to gently swirl it through, creating a marbled effect. Finish by sprinkling with extra chopped pistachios.
  3. Refrigerate for at least 2 hours, or until completely set. Slice into bars or squares with a sharp knife to serve.
