There’s something everyone loves about a self-saucing pudding — that moment when you spoon through the soft sponge and uncover a rich, glossy sauce underneath is pure comfort. This version is inspired by my granny’s classic recipe, but elevated just slightly with toasted hazelnuts and ribbons of Nutella to make it a real crowd-pleaser and a little surprise for guests.

It’s the perfect winter dessert — warm, scoopable, and best served straight from the dish with something cold alongside. The key is not to overcook it; it’s always better to err slightly under, as that’s what gives you plenty of luscious sauce. Keep a close eye towards the end, as ovens can vary and it may cook faster or slower depending on yours.

Self-saucing topping

  • Brown sugar & cocoa powder

    This mixture forms the signature self-saucing layer — creating a slightly crisp, crackly top while melting underneath into a rich, glossy sauce. The brown sugar adds a subtle caramel note, while the cocoa deepens the chocolate flavour.

  • Boiling water

    Poured gently over the topping, it transforms the sugar mixture into a luscious sauce as the pudding bakes — no stirring required.

  • Nutella

    Dolloped over partway through baking, it melts into pockets of molten hazelnut chocolate, adding a luxurious finish and bursts of richness throughout.

To finish

  • Dark chocolate

    Chunks of dark chocolate melt into the hot pudding, creating extra pockets of indulgence. A higher cocoa content (around 70%) is key to balancing the sweetness and adding depth.

Ingredients

Hazelnut chocolate batter
  • 100g hazelnuts
  • 120g unsalted butter, melted
  • 180g brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 180g milk
  • 180g plain flour
  • 40g cocoa powder
  • 2 tsp baking powder
  • ¼ tsp salt
Self-saucing topping
  • 200g brown sugar
  • 40g cocoa powder
  • 500ml boiling water
  • 200g Nutella (about 12 generous teaspoons)
To finish
  • 120g good quality dark chocolate, roughly chopped (70%)

Instructions

Hazelnut chocolate batter
  1. Preheat the oven to 180°C.
  2. Line a medium baking tray and roast the hazelnuts for 6–8 minutes, until fragrant. Set aside to cool slightly, then blitz to a coarse meal (some texture is key).
  3. In a large bowl, whisk together the melted butter and brown sugar. Add the eggs and vanilla, whisking until smooth and glossy.
  4. Stir in the milk. Fold in the flour, cocoa powder, baking powder, and salt. Fold through the ground hazelnuts.
  5. Pour the batter into a large greased baking dish (approx. 30 × 20 cm) or ovenproof skillet.
Self-saucing topping
  1. In a small bowl, mix the brown sugar and cocoa powder. Sprinkle evenly over the batter.
  2. Carefully pour the boiling water over the back of a spoon across the surface (do not stir — this creates the sauce underneath).
  3. Bake for 15 minutes.
  4. Remove from the oven and dollop teaspoons of Nutella across the surface. Lightly swirl with a skewer.
  5. Return to the oven for a further 5–10 minutes, or until the pudding is just set with visible sauce around the edges. Avoid overbaking, as the sauce will reduce too much.
To finish
  1. Immediately scatter the chopped dark chocolate over the top.
  2. Allow it to melt slightly into the surface, then serve warm.

Notes

Serving suggestion:

  • Serve warm with vanilla ice cream or cream
  • Sprinkle with toasted hazelnuts or flaky sea salt
  • Best served in shallow bowls to showcase the sauce

  • Refrigerate, covered, up to 3 days
  • Reheat in microwave until warm
  • Add a splash of milk/cream if needed
  • Best enjoyed fresh; not suitable for freezing
